Classic Creamy Coleslaw

This creamy coleslaw is a refreshing and crunchy side dish that’s perfect for BBQs, picnics, or as a topping for burgers and tacos and guaranteed to be a hit at your next gathering!


Ingredients:

  • 4 cups shredded green cabbage

  • 2 cups shredded red cabbage

  • 1 cup shredded carrots

  • 1/2 cup mayonnaise

  • 1/4 cup sour cream

  • 1 tbsp Dijon mustard

  • 2 tbsp apple cider vinegar

  • Salt and pepper, to taste

  • 2 tbsp fresh parsley, chopped


Method:

  1. Prepare the Vegetables:

    • In a large bowl, combine the shredded green cabbage, red cabbage, and carrots.

  2. Make the Dressing:

    • In a smaller bowl, whisk together the mayonnaise, sour cream, Dijon mustard, apple cider vinegar, salt, and pepper until smooth and creamy.

  3. Combine:

    • Pour the dressing over the cabbage and carrot mixture. Toss well to coat evenly.

  4. Chill and Serve:

    • Cover and refrigerate for at least 30 minutes to allow the flavours to meld together. Garnish with fresh parsley before serving



Pro Tips:

  • For a lighter version, replace half the mayo with Greek yoghurt.

  • Add extras like thinly sliced red onion, raisins, or toasted nuts for a unique twist.

  • Make it zesty by adding a squeeze of lemon juice or a pinch of celery seed.
