Fresh Fruit Salad

This simple and vibrant fruit salad is a refreshing way to enjoy seasonal fruits. Perfect for a quick snack, dessert, or as a side dish for BBQs and picnics!


Ingredients:

  • 2 cups watermelon, cubed

  • 2 cups pineapple, cubed

  • 1 cup strawberries, hulled and halved

  • 1 cup blueberries

  • 1 cup green grapes, halved

  • 2 kiwifruits, peeled and sliced

  • 1 orange, peeled and segmented

  • 1-2 tbsp fresh mint, finely chopped (optional)


For the Dressing:

  • 2 tbsp honey

  • 1 tbsp lime or lemon juice

  • 1 tsp orange zest



Method:

  1. Prepare the Fruits: Wash, peel, and cut all the fruits into bite-sized pieces.

  2. Mix the Dressing:In a small bowl, whisk together honey, lime or lemon juice, and orange zest.

  3. Combine and Toss: In a large mixing bowl, combine all the fruits. Drizzle the dressing over the fruit and toss gently to coat evenly.

  4. Chill and Serve: Cover and refrigerate for 30 minutes to allow the flavours to meld together. Garnish with fresh mint just before serving.


Pro Tips:

  • Swap or add fruits depending on what’s in season (mango, cherries, or pomegranate).

  • Add a sprinkle of shredded coconut or nuts for extra texture.

  • Serve with a dollop of yoghurt or a scoop of ice cream for a more indulgent treat.
