Sautéed Seasonal Greens

This quick and easy recipe highlights the natural flavours of fresh, seasonal greens. Perfect as a healthy side dish. This versatile dish is a easy way to make the most of fresh, seasonal greens.


Ingredients:

  • 1 bunch seasonal greens

    • (e.g., kale, spinach, broccoli, or shanghai (bok choy), washed and chopped

  • 2 tbsp olive oil or butter

  • 2 cloves garlic, minced

  • 1 tbsp lemon juice or apple cider vinegar

  • Salt and pepper, to taste

  • Optional: 1/4 cup toasted nuts (e.g., almonds, walnuts, or pine nuts)


Method:

  1. Prepare the Greens:Trim any tough stems from the greens and chop into bite-sized pieces.

  2. Heat the Pan:Heat olive oil or butter in a large frypan over medium heat.

  3. Sauté the Garlic:Add the minced garlic to the pan and cook for 30 seconds, stirring frequently, until fragrant.

  4. Cook the Greens:Add the greens to the pan and toss to coat them in the oil and garlic. Cook for 3-5 minutes, stirring occasionally, until wilted and tender.

  5. Add Lemon Juice:Drizzle the lemon juice or apple cider vinegar over the greens and season with salt and pepper to taste.

  6. Optional Toppings:Sprinkle toasted nuts over the top for added crunch and flavour.

  7. Serve:Transfer to a serving dish and enjoy immediately.


Pro Tip: For extra flavour, sprinkle with grated Parmesan cheese or a pinch of chili flakes before serving.
